Hot Yogi Barista S'more Chai Latte
Dating back to the 1920's, s'mores comes from the phrase 'some more'. Popularized by the Boy Scouts, Campfire Girls and Girl Scouts, this american treat is now enjoyed in all kinds of ways - including in this hot beverage treat that reminds us of feeling cozy, around friends, while being outside by a warm camfire.
Ingredients for the Cocoa Chai
- ½ cup oat milk
- 2 tablespoons cocoa powder
Ingrendients for the Marshmallow
- 3 packets unflavored gelatin
- 2 cups granulated sugar organic
- 2/3 cup light corn syrup
- Cornstarch or powdered sugar for dusting
To Make the Marshmallow
- In a large bowl, add the gelatin and 1/4 cup cool water. Mix with an electric or stand mixer.
- In a saucepan over medium heat, add the sugar, corn syrup and 1/2 cup of water. Bring this to a boil and let the mixture bubble for 2 minutes, add vanilla.
- Pour the hot sugar into the gelatin mixture and whip on medium high speed for 8-10 minutes until the marshmallows are glossy and stiff peaks form
- Line an 8 by 8-inch baking pan with parchment paper. Apply a very light layer of nonstick spray/or oil on the paper, and then dust heavily with cornstarch. Pour the marshmallow mixture into the baking pan, dust the top with a light sprinkle of cornstarch then let it set for at least 4 hours.
- When the marshmallow is set and firm, use a sharp knife to cut it into several pieces. Dust all the edges in cornstarch or powdered sugar so they don't stick together.
To Make the Hot Yogi Barista Smore Chai Latte
- In a large serving glass add cocoa powder, warmed Yogi Organic Classic Chai concentrate.
- Mix thoroughly with a whisk or milk frother.
- Add warmed, slightly frothed oat milk, top with one or two homemade marshmallows.
(Optional: toast the marshmallow slightly with a hand torch before serving)
